Then there's Cassiopeia who gets countered by picks like Ori rather than Ryze. Kassadin is an easy match up for Ryze but I think Kassa can survive the lane pretty well and lose only slightly.

If you want a tanky Ryze build, I'd suggest Everfrost into either Demonic or Rylai's, then Frozen Heart. That's about as tanky as you can get while still building enough AP to be a real champion.
